Heavenly Grilled Pineapple

Let me just say that I love grilled pineapple. I love, love, love it!!! I have been looking for a recipe for it. I came across this one on the coupon site The Krazy Coupon Lady. It is fantastic. The hubby grilled this for me for dessert. Everyone loved it, and I was in heaven!

One whole pineapple, cut into long spears
2 tablespoons butter
1 cup brown sugar
2 teaspoons cinnamon
lemon juice

Fire up the grill to medium heat. Before putting the pineapple down, sprinkle the spears with half (1 tsp.) of the cinnamon and a little bit of brown sugar. This will facilitate a sweetness and instant carmelization when they hit the grill. In a small saucepan, heat the butter, brown sugar and the rest (1 tsp.) of the cinnamon. Heat until bubbly and the sugar is properly melted. Grill the pineapple spears over direct heat about 2-3 minutes per side, turning occasionally. Each time it turns, baste with a brush of glaze. When finished, plate up and drizzle a final amount of glaze on top.

Chicken Cordon Bleu Bake

This is a really easy and delicious dish. I got the recipe from Sisters' Cafe.

Chicken Cordon Bleu Bake

2 6 oz. boxes stuffing mix
1 can (10 3/4 oz) cream of chicken soup
1 cup milk
1/2 tsp pepper
3/4 lb sliced deli ham, cut into 1 inch stips
1 cup swiss cheese shredded
2 cups cheddar cheese shredded
2 cups cooked shredded chicken

Prepare stuffing mixes according to directions on box. Meanwhile in a bowl, combine soup and milk. Put chicken in a greased 9x13 baking dish. Sprinkle with pepper. Layer with ham, swiss cheese and 1 cups of cheddar cheese, soup mixture and stuffing. Sprinkle with remaining cheddar cheese. (At this point you can freeze it for later if you want. If you freeze it: Thaw in refrigerator overnight. Remove from fridge 30 minutes before baking.) Cover and bake at 350 for 45 minutes. Uncover and bake 10-15 minutes longer.

Best Ever Taco Soup

I can't believe I haven't posted this recipe yet!!! In my opinion, it is the best taco soup ever. My mom gave me the recipe. It is super easy to make and takes about 30 minutes.  It is definitely a crowd pleaser.

The Best Taco Soup
2 pounds hamburger
1 chopped onion
1 can (4 oz.) chopped green chiles
2 cans stewed tomatoes (include liquid in can)
2 cans hominy (15 oz. each, include liquid in can)
1 1/2 cups water
2 cans pinto beans (15 oz. each, include liquid in can)
1 Package Taco Seasoning
2 Tablespoons Hidden Valley ranch dressing mix (the dry stuff in a package)

In a large soup kettle, brown hamburger with the chopped onion.  Drain the grease.  Add the remaining ingredients to the pot.  (Do not drain the liquid from the cans.)  Simmer all ingredients together for 15-20 minutes. Serves 8.  Add cheese and sour cream if desired. Combine with this yummy cornbread for a great meal!
